Roasted Carrot Soup
This classic roasted carrot soup is a wonderful soup to serve with your favourite winter salads, sandwiches, and even holiday entrées. Since carrots go well with so many other flavours, it’s a versatile soup to keep in your freezer.
You might be pleasantly surprised to learn that this creamy soup is actually made without cream. It’s a light and healthy soup, not to mention budget-friendly, too.

Ingredients:
Carrots, Onion, Thyme, Garlic, Ginger, Vegetable Stock, Oil, Salt and Pepper.

Cooking Instructions
Microwave
*DEFROST PRIOR TO COOKING*
- Microwave for 3-4 Minutes. Stir occasionally.
- Place container in the centre of the microwave plate, slightly raise lid on the one side of container.
- Stir occasionally. Check the soup is hot throughout. If not, heat for a further brief period. Microwave ovens vary. These timings are a guide only and are based on 850-1100 watt ovens.
- Use caution when removing the lid as steam may be released.
HOB
*DEFROST PRIOR TO COOKING*
- Decant Contents into a saucepan.
- Heat over a low heat, stirring continuously until the soup begins to bubbly gently.
- Remove from heat and serve
